Hello and welcome to The Amateur Professional! If you’re reading this, you’ve found a unique blog authored by a unique person. My name is Laura and I live in Minneapolis, MN. I’m 23 and currently working as a corporate cook in a business dining setting. However, I graduated in 2016 with a Bachelor of Arts in English and Technical Communication. Working in a corporate kitchen is not something I ever expected of myself, but it is a wonderful stepping stone for me to begin experimenting more with food and coming up with my own take on recipes and old standby dishes.
My love of cooking has a lot to do with how I was raised: my dad would typically grill a protein, and my mom would make the side dishes to go along with that. I spent the hour leading up to meals running back and forth from mom to dad, helping when I could and learning more than I thought I would. Although my duties always included setting the table, in between creative table settings I learned how to roll egg rolls from my mom, how to cook the perfect steak from my dad, and how to bake a delectable carrot cake from my (only) older sister.
As you explore my blog, you may notice the common vegetarian theme. My partner is an omnivore and I will occasionally prepare meat or poultry for him, but in his words, “If Laura cooked it, I’ll eat it. Doesn’t matter what it is. If she cooked it, it’s going to be delicious!” I try to find dishes where omnivores don’t miss the meat because it’s packed with texture and flavor. That being said, a lot of the recipes I share would be a great accompaniment to meat. Don’t be afraid to experiment with them in that aspect – experimentation is how you learn!
